White Chicken Chili Recipe (Creamy, One Pot)

Why You'll Love This Recipe

  • One pot, 55 minutes start to finish, and the chicken poaches right in the broth so there is no separate cooking step.
  • Pantry-heavy. Canned beans, canned green chiles and dried spices do most of the work.
  • It reheats better than almost any other creamy soup, as long as you warm it gently.
  • Mild enough for kids, and the heat is entirely in your control through the chiles and toppings.
Chef's Secret Key Tip

Here's the one thing nobody tells you: mash a cup of the drained beans with half a cup of the hot broth before you add any dairy, then stir that paste back into the pot.

Bean starch thickens the broth in a way cream cheese cannot. It coats the back of a spoon instead of just tasting rich.

The practical payoff is that you can use eight ounces of cream cheese instead of twelve and still get a thicker bowl, so the cumin, oregano and green chile still come through instead of being flattened under dairy.

Read Before You Start

1

Take the cream cheese out of the fridge when you start chopping the onion. Cold cream cheese dropped into hot broth seizes into white lumps that will not melt out no matter how long you stir. Thirty minutes on the counter is enough.

2

Buy low-sodium chicken broth. Between the broth, the canned beans and the cream cheese, this dish carries a lot of hidden salt, and you cannot take it back out once it is in.

Ingredient Deep Dive & Notes

Cream cheese, block only. Do not substitute the tub-style spreadable kind. Whipped and spreadable cream cheese carry more water plus gums and stabilizers that behave differently under heat, and they tend to break into a grainy layer instead of melting smooth. Full-fat block cream cheese is the one place in this recipe where the specific form actually matters.

Sour cream, full fat. Low-fat and fat-free sour cream have less fat protecting the proteins, so they curdle at a lower temperature. Greek yogurt works but is more fragile still, so temper it if you go that route.

Cannellini or great northern beans. Both hold their shape while still mashing easily. Navy beans work too. Chickpeas do not, they stay firm and the texture goes wrong.

Canned mild diced green chiles. These carry the flavor of the dish, not the heat. Two four-ounce cans is not too much. If you want actual spice, add cayenne or a fresh jalapeño separately so you can control it.

Chicken breasts or thighs. Breasts poach clean and shred into neat strands. Thighs stay juicier and forgive overcooking. Rotisserie chicken works when you are short on time, and I cover the timing change for that below.

Cumin and Mexican oregano. Mexican oregano is citrusy and grassy where Mediterranean oregano is more minty. Either works, but if you have both, use Mexican here. For a bold pantry spice blend that pairs with this dish, see our Homemade Taco Seasoning. For an earthy poultry-tailored blend with smoked paprika and coriander, try our Smoky Chicken Taco Seasoning.

Lime juice, fresh. Bottled lime juice tastes muted and slightly metallic in a dairy-heavy soup where there is nothing to hide behind.

Equipment Needed

  • A 5 to 6 quart Dutch oven or heavy-bottomed pot. A thin pot scorches the dairy at the bottom.
  • A potato masher or a sturdy fork for the beans. An immersion blender works but pulse it, do not purée.
  • Two forks or a stand mixer for shredding the chicken. The mixer with the paddle attachment shreds two pounds in about fifteen seconds.
  • An instant-read thermometer.

Detailed Step-by-Step Cooking Guide

Step 1

Build the Aromatic Base & Bloom Spices

Sauté the onion in oil for 5 to 6 minutes, then add garlic for 45 seconds. Stir in cumin, oregano, coriander, and cayenne for 30 seconds until fragrant. Stir in green chiles and let sizzle 1 minute.

Step 2

Poach Chicken & Mash Beans

Add chicken broth and lower in chicken breasts. Simmer gently covered for 15 to 18 minutes until internal temp reads 165°F (74°C). Meanwhile, mash 1 cup drained beans with 1/2 cup hot broth into a rough paste.
Step 3

Shred & Return Chicken with Beans

Transfer chicken to a cutting board, shred into strands with two forks, and return to pot with whole beans, corn, and mashed bean paste. Stir 2 minutes until broth visibly thickens.
Step 4

Melt Cream Cheese & Temper Sour Cream

Reduce heat to low so surface barely moves. Add cubed softened cream cheese a few at a time, stirring until completely melted. Whisk sour cream with 2 ladles hot chili in a small bowl before stirring in. Remove from heat, stir in lime juice, cilantro, salt and pepper, and rest 10 minutes.

Troubleshooting & QA

Getting the Creamy Texture Right

It should coat a spoon and hold a shallow trench for a second when you drag through it, with visible shredded chicken and whole beans suspended rather than sitting at the bottom.

Too thin

Mash another half cup of beans and stir them in, or simmer uncovered for 5 more minutes before you add the dairy. Adding more cream cheese makes it heavy rather than thick.

Grainy or curdled

Dairy proteins break when the pot boils, or when cold dairy hits hot liquid. Pull off the heat immediately and blend a ladleful smooth with an immersion blender, then stir back in.

White lumps that will not dissolve

Cream cheese was too cold or added too fast. Microwave lumps in 10-second bursts, whisk smooth with hot broth, and return to pot.

Slow Cooker and Instant Pot Adaptations

Slow Cooker: Sauté aromatics in a skillet first. Add broth, chicken, beans, and spices to slow cooker. Cook on low 5 to 6 hours or high 3 hours. Shred chicken, stir in mashed beans, switch to warm, and melt in cream cheese followed by tempered sour cream.
Instant Pot: Use sauté mode for onion, garlic, and spices. Add broth, chicken, and beans; pressure cook on high 12 minutes with 10-minute natural release. Cancel heat completely before stirring in cream cheese and tempered sour cream.

How to Serve, Store & Reheat

To Serve

Toppings do real work here. Serve with crushed tortilla chips, Monterey Jack, avocado, pickled red onion, sliced jalapeño, cilantro, lime wedges, and warm cornbread. Leftover chili also makes an incredible hearty topping spooned over hot baked potatoes in the oven with extra melted cheese.

To Store

Refrigerate in an airtight container for up to 4 days. It thickens overnight, which is normal.

To Reheat

Warm over low heat on the stove with a splash of broth or milk to loosen, stirring constantly without boiling. In microwave, use 50% power in 1-minute bursts.

To Freeze

Do not freeze with dairy included. Freeze the base after chicken, beans, and mashed bean paste have cooked, for up to 3 months. Thaw overnight, reheat, and stir in cream cheese and tempered sour cream fresh.

Dietary Variations

Dairy-free

Swap cream cheese for plain dairy-free cream cheese and sour cream for 1/2 cup full-fat coconut milk. Mash 1 1/2 cups of beans instead of 1 cup to build body.

Low-carb

Cut beans to one can and omit corn. Add 2 cups diced cauliflower during the last 10 minutes of simmering, and thicken with 1 tbsp cornstarch slurry.

Higher protein, lighter

Use 2 lbs chicken and swap sour cream for full-fat Greek yogurt, tempering carefully with 3 ladles of hot broth strictly off the heat.

Chef's Pro Kitchen Note

The lime at the end is not a garnish decision, it is a structural one. A pot this heavy on dairy and starch has almost no acid in it, and without acid the whole dish coats your mouth in a way that makes a second bowl unappealing.

Two tablespoons of fresh lime juice, stirred in off the heat, cuts the fat and makes the cumin and green chile distinct.

Step-by-Step Instructions

Follow along and mark each step complete as you cook

1

Heat the oil in a 5 to 6 quart Dutch oven over medium. Cook the onion for 5 to 6 minutes until translucent. Add the garlic and cook 45 seconds.

2

Add the cumin, oregano, coriander and cayenne. Stir constantly for 30 seconds until fragrant and slightly darkened. Stir in the green chiles and cook 1 minute.

3

Pour in the broth and scrape the bottom of the pot. Add the chicken, bring to a bare simmer, cover, and cook 15 to 18 minutes for breasts or 18 to 20 for thighs, until the thickest point reads 165°F (74°C).

4

While the chicken cooks, mash 1 cup of the drained beans with ½ cup hot broth from the pot into a rough paste. Set aside.

5

Transfer the chicken to a board and shred with two forks. Return it to the pot with the remaining beans, the corn and the mashed bean paste. Stir 2 minutes until the broth thickens.

6

Reduce the heat to low so the surface barely moves. Add the cream cheese cubes a few at a time, stirring until each batch melts fully before adding more.

7

Whisk the sour cream in a small bowl with 2 ladles of hot chili, one at a time, until loose. Stir the mixture back into the pot.

8

Remove from the heat. Stir in the lime juice, cilantro, salt and pepper. Taste and adjust the salt.

9

Rest uncovered for 10 minutes before serving. Top as you like.

Recipe Card Notes & Tips

  • Rotisserie chicken shortcut: skip step 3's poaching, simmer the broth 5 minutes on its own, and stir in about 4 cups of shredded meat at step 5.
  • Never let the pot boil after the cream cheese or sour cream goes in. Boiling is what causes curdling, and it cannot be reversed once it fully separates.
